Ingredients

  • Plain Greek Yogurt (full fat or 2% recommended) – 2 cups
  • Maple Syrup or Honey – 1/4 cup
  • Alcohol-Free Vanilla Extract – 1 teaspoon
  • Creamy Peanut Butter – 1/4 cup
  • Semi-sweet Chocolate Chips – 1/2 cup
  • Coconut Oil (or neutral oil) – 1 teaspoon
  • Pinch of Salt

Instructions

  1. Step 1: Line a standard baking sheet (approximately 9×13 inches or similar) with parchment paper. Ensure the parchment paper hangs over the sides slightly for easy removal.
  2. Step 2: In a medium bowl, combine the Greek yogurt, maple syrup (or honey), vanilla bean paste, and pinch of salt. Stir thoroughly until the mixture is smooth and evenly sweetened. Spread the yogurt mixture onto the prepared baking sheet in a thin, even layer.
  3. Step 3: Gently melt the creamy peanut butter in a small microwave-safe bowl (about 20-30 seconds). Dollop the melted peanut butter across the surface of the yogurt. Use a skewer, toothpick, or knife to gently swirl the peanut butter into the yogurt base.
  4. Step 4: In a separate small bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth. Drizzle the melted chocolate mixture evenly over the peanut butter yogurt bark.
  5. Step 5: Immediately transfer the baking sheet to the freezer. Freeze for a minimum of 2 to 3 hours, or until the bark is completely solid and easily snaps apart. Once frozen, lift the bark using the parchment paper handles and break it into irregular pieces for serving. Store leftover bark in an airtight container in the freezer.

  • To maintain optimal crunch and prevent freezer burn, layer the broken bark pieces between parchment paper inside an airtight container before returning them to the freezer.
