- 8 ounces Dark Chocolate (70% cacao or higher), chopped
- 3 cups Cooked Quinoa, cooled completely
- 1/4 cup Peanut Butter (or any nut butter)
- 1 teaspoon Vanilla Extract (optional)
- 1/4 teaspoon Sea Salt (optional)
- 1 tablespoon Coconut Oil (optional, for shinier chocolate)
Instructions
- Step 1: Line a baking sheet with parchment paper.
- Step 2: Melt the dark chocolate in a double boiler or microwave in 30-second intervals, stirring in between, until smooth. If using, stir in coconut oil for a shinier finish.
- Step 3: In a large bowl, combine the cooked quinoa and peanut butter. Mix well until the quinoa is evenly coated. If using, stir in the vanilla extract and sea salt.
- Step 4: Pour the melted chocolate over the quinoa mixture and gently fold until all the quinoa is well coated with the chocolate.
- Step 5: Drop spoonfuls of the chocolate quinoa mixture onto the prepared baking sheet.
- Step 6: Refrigerate for at least 30 minutes, or until the crisps are firm. Store in an airtight container in the refrigerator.

- Store these crisps in the fridge to keep the chocolate firm and prevent them from melting.
