- 1 (10-12 oz) tube refrigerated biscuit dough (8 count)
- 4 tablespoons unsalted butter, melted, divided
- 1/4 cup granulated sugar
- 1 cup fresh or frozen blackberries
- 1/2 cup powdered sugar (confectioners' sugar)
- 1 tablespoon milk or heavy cream
Instructions
- Step 1: Preheat oven to 375°F (190°C). Melt 1 tablespoon of butter and brush the bottom and sides of an 8-inch cast iron skillet or baking dish. In a small bowl, combine the remaining 3 tablespoons melted butter and the granulated sugar.
- Step 2: Separate the biscuit dough. Working on a lightly floured surface, flatten each biscuit slightly into an oval shape (or lightly roll them out). Spread the sugar-butter mixture evenly over the surface of the flattened biscuits.
- Step 3: Scatter the fresh or frozen blackberries evenly over the buttered biscuits. Roll each biscuit tightly into a log, starting from the shorter end. Slice each log into two pieces, creating 16 small sweet rolls.
- Step 4: Arrange the cut sweet rolls spiral-side up in the prepared cast iron skillet. Bake for 18 to 22 minutes, or until the tops are golden brown and the biscuits are cooked through.
- Step 5: While the rolls are baking, prepare the glaze. Whisk together the powdered sugar and the milk/cream in a small bowl until smooth. If the glaze is too thick, add a tiny splash more milk; if too thin, add more powdered sugar.
- Step 6: Remove the rolls from the oven and allow them to cool in the skillet for 5 minutes. Drizzle the prepared glaze generously over the warm sweet rolls before serving immediately.
Notes
- To maintain freshness, keep unglazed leftovers in an airtight container at room temperature for up to two days, glazing them just before the second serving.
- Bring back that freshly baked texture by placing leftovers on a baking sheet and warming them briefly (5-7 minutes) in a 350°F oven.
- If you are using frozen blackberries, toss them with a teaspoon of flour before sprinkling them on the dough; this helps absorb excess moisture released during baking and keeps the rolls from becoming watery.
- For an elevated dessert, serve these warm rolls topped with a dollop of fresh whipped cream or a scoop of high-quality vanilla bean ice cream.
