Instructions
- Step 1: In a small bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well until a slightly sticky filling forms.
- Step 2: Stuff each pitted date with about a teaspoon of the coconut mixture.
- Step 3: Press two almonds into the coconut filling of each date.
- Step 4: Melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Step 5: Dip each stuffed date into the melted chocolate, ensuring it is fully coated. Alternatively, drizzle chocolate over the dates.
- Step 6: Place the chocolate-covered dates on a parchment-lined baking sheet and refrigerate for at least 30 minutes, or until the chocolate is set.
