Instructions
- Step 1: Slice each Medjool date lengthwise down one side and carefully remove the pits, ensuring the dates remain intact for stuffing. Set the dates aside on a parchment-lined tray.
- Step 2: Prepare the filling by mixing the shredded coconut, coconut cream, vanilla bean paste, and sea salt in a small bowl until thoroughly combined and slightly sticky.
- Step 3: Take approximately one teaspoon of the coconut mixture and press it into the cavity of each date. Ensure the date is full but still able to close slightly around the filling.
- Step 4: Press one whole blanched almond directly into the center of the coconut filling in each date.
- Step 5: Melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle or dip the stuffed dates halfway into the melted chocolate mixture.
- Step 6: Return the finished dates to the parchment-lined tray and refrigerate for 20-30 minutes, or until the chocolate has fully set. Store leftovers in an airtight container in the refrigerator.
