Delicious apple and brie stuffed chicken with maple dijon glaze recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Boneless, skinless chicken breasts: 4 (6-8 ounces each)
  • Brie cheese: 4 ounces, rind removed, cut into cubes
  • Apple: 1 medium, peeled, cored, and diced
  • Fresh thyme: 1 tablespoon, chopped
  • Olive oil: 2 tablespoons
  • Maple syrup: 2 tablespoons
  • Dijon mustard: 1 tablespoon
  • Salt and pepper: to taste

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Step 2: Cut a deep pocket horizontally into the side of each chicken breast, being careful not to cut all the way through.
  3. Step 3: In a small bowl, combine the diced apple, brie cheese cubes, and chopped thyme. Mix well.
  4. Step 4: Stuff each chicken breast with the apple and brie mixture. Season the outside of the chicken breasts with salt and pepper.
  5. Step 5: In a separate small bowl, whisk together the maple syrup, Dijon mustard, and olive oil to create the glaze.
  6. Step 6: Place the stuffed chicken breasts in the prepared baking dish. Brush the maple Dijon glaze evenly over the chicken. Bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork. Let rest for 5 minutes before serving.

Notes

  • Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
  • For best results, reheat the stuffed chicken gently in the oven to prevent the brie from melting excessively and making the chicken dry.
  • Serve this dish alongside a fresh green salad or roasted vegetables for a complete and balanced meal.
  • Don't overstuff the chicken breasts; a moderate amount of filling ensures even cooking and prevents the brie from oozing out during baking.
