A sophisticated grilled cheese! Creamy, melting Brie meets spiced apple butter on crunchy, buttery sourdough. This sweet-savory masterpiece takes minutes to grill.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 slices Sourdough bread (or preferred sturdy bread)
  • 3 ounces Brie cheese, sliced thin (rind optional)
  • 2 tablespoons Apple Butter
  • 1 tablespoon Unsalted butter, softened (for grilling)
  • 1/4 teaspoon Ground cinnamon
  • 1/2 teaspoon Honey (optional drizzle)

Instructions

  1. Step 1: Prepare the filling mixture by combining the apple butter and ground cinnamon in a small bowl. Ensure the unsalted butter is fully softened for easy spreading.
  2. Step 2: Butter one side of each slice of bread thoroughly with the softened unsalted butter. On the unbuttered side of one slice, spread the apple butter mixture evenly.
  3. Step 3: Layer the sliced brie cheese over the apple butter. If using, drizzle the 1/2 teaspoon of honey over the cheese before topping with the second slice of bread (buttered side facing out).
  4. Step 4: Place a non-stick skillet or griddle over medium-low heat. Carefully place the assembled sandwich in the skillet. Cook for 3 to 4 minutes per side, pressing lightly with a spatula to ensure even grilling.
  5. Step 5: When both sides are golden brown and the brie cheese is thoroughly melted and gooey (you should see some slight oozing), remove the sandwich from the skillet.
  6. Step 6: Slice the grilled cheese in half immediately using a sharp knife and serve warm.

Notes

  • If you have leftovers, wrap the cooled sandwich tightly in foil and refrigerate for up to two days, knowing the bread will lose its crispness.
  • To revive the crisp crust, reheat the sandwich in a dry, non-stick skillet over low heat, optionally tented with foil, until the brie is gooey again.
  • For a perfect sweet-and-savory pairing, serve this decadent grilled cheese with a small side of lightly dressed arugula salad or crisp turkey prosciutto chips.
  • For the best melt, ensure the skillet remains at medium-low heat; rushing the process will burn the buttery sourdough before the rich Brie fully oozes.
