Instructions
- Step 1: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Step 2: Pat the salmon fillets completely dry with a paper towel. Rub each fillet evenly with the olive oil, then generously coat all sides with the Cajun seasoning and kosher salt. Place the fillets on the prepared baking sheet.
- Step 3: Bake the salmon for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork (the internal temperature should reach 145°F).
- Step 4: While the salmon bakes, prepare the topping. In a small bowl, gently combine the diced avocados, fresh lime juice, and chopped cilantro. Toss lightly to coat.
- Step 5: Remove the baked salmon from the oven. Spoon the fresh avocado mixture evenly over the top of each hot fillet and serve immediately.

- For leftovers, store the cooked salmon separately from the avocado topping; the topping will brown quickly once mixed, even in the fridge.
