Ingredients
- Cod fillets: 4 (about 6 oz each)
- Unsalted butter: 1/2 cup (1 stick)
- Garlic: 4 cloves, minced
- Old Bay Seasoning: 2 tablespoons
- Fresh lemon juice: 1 tablespoon
- Fresh parsley: 2 tablespoons, chopped
Instructions
- Step 1: Preheat the oven to 400°F (200°C). Prepare a large baking dish by lining it with parchment paper for easy cleanup.
- Step 2: In a small microwave-safe bowl, melt the butter. Whisk the melted butter together with the minced garlic, Old Bay Seasoning, and fresh lemon juice until the mixture is well combined.
- Step 3: Arrange the cod fillets in a single layer in the prepared baking dish. Pour the garlic butter sauce evenly over the top of the cod, ensuring each fillet is well-coated with the seasoning.
- Step 4: Bake the cod for 12 to 15 minutes, depending on the thickness of the fillets, until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Step 5: Remove the cod from the oven, drizzle any remaining pan juices over the fish, and immediately garnish generously with the fresh chopped parsley before serving.
Notes
- Store leftover cod in an airtight container in the refrigerator for up to 2 days, noting that the strong Old Bay seasoning might intensify overnight.
- To prevent drying out, reheat leftovers gently in an oven set to 300°F (150°C) covered loosely with foil, adding a teaspoon of water or fresh butter to the dish.
- Serve this intensely flavored cod alongside simple steamed asparagus or a fluffy bed of white rice to soak up the delicious garlic butter sauce.
- Because Old Bay is salty, taste the melted garlic butter mixture before coating the fish and add a quick squeeze of extra lemon juice if the flavor seems overwhelming.
