Instructions
- Step 1: Preheat the oven to 400°F (200°C). Lightly grease or line a 9×13 inch baking dish.
- Step 2: In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper to create the marinade/sauce.
- Step 3: Place the chicken breasts in the prepared baking dish. Pour approximately half of the balsamic mixture over the chicken, ensuring both sides are coated, and reserve the remaining mixture for later.
- Step 4: Bake the seasoned chicken for 18-20 minutes, or until the internal temperature reaches about 155°F (68°C).
- Step 5: Remove the dish from the oven. Spoon the remaining reserved balsamic mixture over the chicken, then top each breast generously with the mozzarella cheese.
- Step 6: Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C). Let the chicken rest for 5 minutes before serving.

- Store leftovers promptly in an airtight container for up to 3 days; the rich balsamic sauce helps keep the chicken moist, but ensure quick cooling to maintain quality.
- To prevent drying, reheat single servings gently in the microwave with a tiny splash of water or broth, or use a covered oven dish at 300°F (150°C) until just warmed through.
