- All-purpose flour 1 1/2 cups
- Baking soda 1 teaspoon
- Salt 1/4 teaspoon
- Unsalted butter, softened 1/2 cup
- Granulated sugar 3/4 cup
- Eggs 2 large
- Mashed ripe bananas 1 1/2 cups (about 3 medium)
- Vanilla extract 1 teaspoon
Instructions

- Step 2: In a medium bowl, whisk together the flour, baking soda, and salt.
- Step 3: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla extract.
- Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Step 5: Pour the batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Step 6: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Store cooled cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
- A quick zap in the microwave for 15 seconds will make each slice feel freshly baked and extra comforting.
- Serve a slice warm with a dollop of whipped cream or a scoop of vanilla ice cream for a truly delightful treat.
- For even more banana flavor, use bananas that are very ripe, almost to the point of being overripe.
