Delicious banana snack cake recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • All-purpose flour 1 1/2 cups
  • Baking soda 1 teaspoon
  • Salt 1/4 teaspoon
  • Unsalted butter, softened 1/2 cup
  • Granulated sugar 3/4 cup
  • Eggs 2 large
  • Mashed ripe bananas 1 1/2 cups (about 3 medium)
  • Vanilla extract 1 teaspoon

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. Step 2: In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Step 3: In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla extract.
  4. Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Step 5: Pour the batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Step 6: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Store cooled cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
  • A quick zap in the microwave for 15 seconds will make each slice feel freshly baked and extra comforting.
  • Serve a slice warm with a dollop of whipped cream or a scoop of vanilla ice cream for a truly delightful treat.
  • For even more banana flavor, use bananas that are very ripe, almost to the point of being overripe.
