  • Hoagie Rolls: 2 large

Instructions

  1. Step 1: Season chicken breasts generously with salt, pepper, and Italian seasoning. Heat olive oil and butter in a large skillet over medium-high heat. Sear the chicken breasts for 4-5 minutes per side, until golden brown. Remove chicken from skillet and set aside.
  2. Step 2: Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant. Stir in the chopped sun-dried tomatoes.
  3. Step 3: Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream and grated Parmesan cheese. Reduce heat to low and simmer for 5 minutes, or until the sauce has slightly thickened.
  4. Step 4: Return the chicken breasts to the skillet and nestle them into the sauce. Spoon the sauce over the chicken, ensuring they are well coated. Cover and simmer for another 8-10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  5. Step 5: To assemble the sandwiches, slice each hoagie roll lengthwise. Spoon a generous amount of the marry me chicken and sauce onto the bottom half of each roll. Sprinkle with additional Parmesan cheese and fresh basil, if desired. Top with the other half of the roll and serve immediately.
