- Rolled Oats (Old Fashioned): 1/2 cup
- Milk (Dairy or Non-Dairy): 3/4 cup
- Cream Cheese (Softened): 2 tablespoons
- Chia Seeds: 1 tablespoon
- Maple Syrup or Honey: 1 tablespoon, divided
- Vanilla Powder: 1/4 teaspoon
- Fresh or Frozen Blueberries: 1/3 cup
- Pinch of Salt: 1 small pinch
Instructions
- Step 1: Combine the dry ingredients (oats, chia seeds, and salt) in a mason jar or airtight container. Add the milk, 1/2 tablespoon of maple syrup, and the vanilla bean paste. Stir well until all ingredients are thoroughly combined.
- Step 2: Prepare the cheesecake layer by mixing the softened cream cheese with the remaining 1/2 tablespoon of maple syrup in a separate small bowl until completely smooth and lump-free.
- Step 3: Pour the oat mixture into the container, then gently spoon the cream cheese mixture directly on top. If you desire a "swirl," use a spoon or knife to gently marble the cream cheese into the oats once or twice, but do not fully mix.
- Step 4: Add the blueberries to the jar. You can either gently push them down into the oat mixture or reserve a few for topping the next morning.
- Step 5: Seal the container tightly and refrigerate for a minimum of 6 hours, or ideally overnight, to allow the oats to absorb the liquid and thicken completely.
- Step 6: Before serving, taste and add an extra drizzle of maple syrup if desired, and top with any remaining fresh blueberries or granola. Serve chilled directly from the jar.
Notes
- For best flavor and texture, these oats will keep deliciously chilled in the fridge for up to 3 days in an airtight container.
- Although best served cold, if warming, microwave briefly (30 seconds max) and stir gently to prevent the cream cheese layer from separating.
- Enhance the "cheesecake" profile by topping your chilled oats with a handful of crushed graham crackers or crunchy granola just before serving for contrasting texture.
- Ensure your cream cheese is completely soft and fully incorporated with the maple syrup; tiny lumps can make the "cheesecake" experience gritty instead of smooth.
