Cheesecake meets zesty lemon and sweet blueberry in this irresistible, no-bake Puppy Chow. We melt white chocolate and coat crispy Chex, tossing them in a bespoke sugary powder blend.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 9 cups Rice Chex or Corn Chex cereal
  • 4 ounces white chocolate chips
  • 1/4 cup unsalted butter
  • 1 teaspoon lemon extract
  • 2 cups powdered sugar
  • 3.4-ounce box instant cheesecake pudding mix (dry powder)
  • 2 tablespoons freeze-dried blueberry powder or finely crushed freeze-dried blueberries

Instructions

  1. Step 1: Combine the dry coating by pouring the powdered sugar, the instant cheesecake pudding mix powder, and the blueberry powder into a large, resealable plastic bag. Shake or toss the bag gently to mix the coating ingredients thoroughly and set aside.
  2. Step 2: Melt the coating base by combining the white chocolate chips and the butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until the mixture is smooth and completely melted. Stir in the lemon extract until fully incorporated.
  3. Step 3: Carefully pour the Chex cereal into a very large bowl. Pour the melted white chocolate mixture evenly over the cereal and use a rubber spatula or wooden spoon to gently fold the mixture until the cereal pieces are evenly coated.
  4. Step 4: Transfer the coated cereal into the resealable bag containing the dry powdered sugar mixture. Seal the bag tightly and gently shake the bag for 1 to 2 minutes, ensuring all the cereal pieces are completely covered in the blueberry lemon cheesecake coating.
  5. Step 5: Spread the finished puppy chow onto a baking sheet lined with parchment paper in a single layer to cool and set completely for about 15 to 20 minutes before serving or storing in an airtight container.

Notes

  • For maximum crunch and to prevent the powdered coating from clumping, store leftovers in an airtight container in the refrigerator for up to two weeks.
  • Ensure your freeze-dried blueberry powder is finely pulverized, as any larger chunks of fruit will become sticky when combined with the powdered sugar, compromising the dry coating.
  • Elevate this dessert by serving it layered with scoops of vanilla bean ice cream or mixed with broken vanilla wafer cookies for contrasting texture.
  • To guarantee a thin, even coat of the melted white chocolate mixture without crushing the cereal, always use the largest mixing bowl you own and fold the ingredients gently.
