  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Cod fillets: 1.5 pounds
  • Salt turkey or beef bacon, diced: 4 ounces
  • Yellow onion, thinly sliced: 1 medium
  • Molasses: 2 tablespoons
  • Dry mustard: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Black pepper: 1/4 teaspoon
  • Boiling water: 1 cup

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Lightly grease a baking dish.
  2. Step 2: In a skillet over medium heat, cook the salt turkey or turkey bacon until crisp. Remove the turkey bacon and set aside, reserving the rendered fat in the skillet.
  3. Step 3: Sauté the sliced onion in the rendered beef bacon fat until softened, about 5-7 minutes.
  4. Step 4: In the baking dish, arrange the cod fillets. Sprinkle with salt, pepper, and the cooked beef bacon. Top with the sautéed onions.
  5. Step 5: In a small bowl, whisk together the molasses, dry mustard, and boiling water. Pour this mixture over the cod and onions.
  6. Step 6: Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.

Notes

  • Leftovers are delicious the next day; store them in an airtight container in the refrigerator for up to 3 days.
  • To reheat, gently warm in a low oven (275°F) or microwave in short bursts to avoid drying out the cod.
  • Serve Boston Baked Cod with creamy mashed potatoes or rice to soak up the savory molasses sauce.
  • Don't be shy with the beef turkey bacon; it adds a wonderful smoky depth that complements the sweetness of the molasses.
