- 1.5 lbs Boneless, skinless chicken breasts
- 1 tbsp Olive oil
- 1 medium Yellow onion, chopped
- 2 cloves Garlic, minced
- 1 tbsp Cajun seasoning
- 1 tsp Dried oregano
- 1/2 tsp Cayenne pepper (optional, for extra heat)
- 4 cups Chicken broth
- 1 (15-ounce) can Great Northern beans, rinsed and drained
- 1 (4-ounce) can Diced green chiles, undrained
- 8 oz Cream cheese, softened
- 1/4 cup Chopped fresh cilantro, for garnish
Instructions
- Step 1: Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken breasts and cook until browned on both sides. Remove chicken and set aside.
- Step 2: Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic, Cajun seasoning, oregano, and cayenne pepper (if using) and cook for 1 minute more, stirring constantly.
- Step 3: Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Add the Great Northern beans and diced green chiles.
- Step 4: Return the chicken breasts to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the chicken is cooked through.
- Step 5: Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
- Step 6: Stir in the softened cream cheese until melted and the chili is creamy. Simmer for another 5 minutes to allow the flavors to meld. Garnish with fresh cilantro before serving.
Notes
- For best flavor, refrigerate leftover chili in an airtight container for up to 3 days, allowing the spices to meld even further.
- Reheat gently on the stovetop over medium-low heat, stirring occasionally, or microwave in 30-second intervals, stirring between each interval, to maintain the creamy texture.
- Serve this comforting chili with a dollop of sour cream or Greek yogurt and a sprinkle of your favorite shredded cheese for added richness.
- Don't skip browning the chicken breasts in Step 1 – it adds a depth of flavor that elevates the entire chili.
