- 1 cup light corn syrup
- 1 cup granulated sugar
- 1 cup peanut butter
- 6 cups Special K cereal
- 1 teaspoon vanilla extract
- 1/2 cup butter or margarine
- 1/4 teaspoon salt
Instructions
- Step 1: In a large saucepan, melt butter over medium heat.
- Step 2: Add corn syrup and sugar to the melted butter. Bring to a boil, stirring constantly, and boil for 1 minute. Remove from heat.
- Step 3: Stir in peanut butter and vanilla extract until smooth and completely combined.
- Step 4: Add the Special K cereal and salt. Gently fold the cereal into the peanut butter mixture until all the cereal is well coated.
- Step 5: Press the mixture into a lightly greased 9×13 inch pan.
- Step 6: Let cool completely before cutting into bars.
Notes
- Store cooled bars in an airtight container at room temperature to maintain their chewy texture.
- While not usually necessary, a quick zap in the microwave (5-10 seconds) will make them extra gooey if desired.
- Cut the bars into smaller squares for easy snacking, or top with a drizzle of melted chocolate for a more decadent treat.
- For easier mixing, warm the peanut butter slightly before adding it to the hot syrup mixture.
