Instructions

  1. Step 1: Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, 1/2 teaspoon of kosher salt, 1/4 teaspoon of black pepper, and the smoked paprika. Spread them in a single layer on a large baking sheet and roast for 20-25 minutes, or until fork-tender and lightly caramelized.
  2. Step 2: While the sweet potatoes are roasting, prepare the chicken. In a medium bowl, toss the chicken cubes with the remaining 2 tablespoons of olive oil, 1/2 teaspoon of kosher salt, 1/4 teaspoon of black pepper, and the garlic powder.
