Ingredients
- Chicken sausage, sliced: 1 pound
- Sweet potatoes, peeled and cubed: 2 medium
- Olive oil: 2 tablespoons
- Garlic, minced: 4 cloves
- Honey: 3 tablespoons
- Soy sauce: 2 tablespoons
- Red pepper flakes: 1/4 teaspoon (optional)
- Fresh parsley, chopped: 2 tablespoons
Instructions
- Step 1: Preheat oven to 400°F (200°C). In a large bowl, toss sweet potatoes with 1 tablespoon of olive oil. Spread them in a single layer on a baking sheet.
- Step 2: Bake the sweet potatoes for 15 minutes.
- Step 3: While sweet potatoes are baking, prepare the sauce. In a small bowl, whisk together the minced garlic, honey, soy sauce, and red pepper flakes (if using).
- Step 4: After 15 minutes, remove the baking sheet from the oven. Add the sliced chicken sausage to the baking sheet with the sweet potatoes. Drizzle the honey garlic sauce over the sausage and sweet potatoes, and toss to coat evenly.
- Step 5: Return the baking sheet to the oven and bake for another 15-20 minutes, or until the sweet potatoes are tender and the sausage is cooked through.
- Step 6: Garnish with fresh chopped parsley before serving.
