- 1 cup Plain Greek Yogurt (full-fat or 2%)
- 2 tablespoons Powdered Sugar (sifted)
- 1 tablespoon Unsweetened Cocoa Powder
- 1/4 teaspoon Peppermint Extract
- 1/2 teaspoon Vanilla Bean Paste
- 1 teaspoon Maple Syrup or Honey
- 1 tablespoon Crushed Peppermint Candies or Candy Cane
Instructions
- Step 1: In the bowl of a stand mixer fitted with the whisk attachment, or using a hand mixer, combine the Greek yogurt and the powdered sugar. Beat on medium-high speed for 2 to 3 minutes until the mixture significantly increases in volume and becomes light and airy.
- Step 2: Reduce the speed to low. Add the unsweetened cocoa powder, peppermint extract, alcohol-free vanilla extract, and maple syrup (or honey).
- Step 3: Gradually increase the speed to medium and whip for an additional 1 to 2 minutes, scraping down the sides of the bowl once, until the mixture is uniform in color and completely smooth.
- Step 4: Transfer the whipped yogurt mixture into individual serving dishes or a small container, cover tightly, and refrigerate for at least 30 minutes to allow the flavors to meld and the texture to set.
- Step 5: Just before serving, sprinkle the crushed peppermint candies or candy cane pieces over the top of the chilled yogurt. Serve immediately.
Notes
- For the fluffiest, most stable result, ensure you use full-fat Greek yogurt, as low-fat versions often deflate quickly after the initial whipping.
- Store any leftovers tightly covered in the refrigerator for up to three days, but note that the mixture may lose some volume and require a quick re-whip before serving.
- Crucially, do not add the crushed peppermint candies until immediately before serving, otherwise, they will weep and dissolve into the chilled yogurt.
- Layer this creamy mixture with crumbled chocolate wafers or gingersnaps to transform it into a quick, elegant holiday parfait.
