Ingredients

  • Pinch of Salt: 1/8 teaspoon

Instructions

  1. Step 1: In a medium-sized bowl, whisk together the unsweetened almond milk, chocolate protein powder, unsweetened cocoa powder, stevia (or erythritol), vanilla extract, and pinch of salt until well combined and there are no lumps.
  2. Step 2: Add the chia seeds to the mixture and stir thoroughly to ensure they are evenly distributed.
  3. Step 3: Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
  4. Step 4: After chilling, stir the pudding well. If it is too thick, add a tablespoon or two more of almond milk until you reach your desired consistency.
  5. Step 5: Divide the chocolate protein pudding into bowls and top with your favorite toppings, such as berries, nuts, or sugar-free chocolate chips, before serving.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days – it thickens as it sits!
  • If you want a warm pudding, gently microwave in 30-second intervals, stirring in between, until heated through.
