Ingredients
- Full-fat cottage cheese: 1 cup (225g)
- Unsweetened cocoa powder: 1/4 cup (25g)
- Maple syrup: 1/4 cup (60ml)
- Vanilla extract: 1 teaspoon (5ml)
- Pinch of sea salt: 1/8 teaspoon
- Chocolate shavings (optional): for garnish
- Fresh Berries (optional): for garnish
Instructions
- Step 1: Place the cottage cheese in a food processor or blender. Process until completely smooth and creamy, scraping down the sides as needed. This may take a few minutes depending on your appliance.
- Step 2: Add the cocoa powder, maple syrup, vanilla extract, and salt to the blended cottage cheese.
- Step 3: Process again until all ingredients are fully incorporated and the mixture is smooth and chocolatey. Taste and adjust sweetness as desired, adding more maple syrup if needed.
- Step 4: Transfer the mousse to serving dishes or glasses.
- Step 5: Refrigerate for at least 30 minutes to allow the mousse to firm up and flavors to meld.
- Step 6: Garnish with chocolate shavings and fresh berries, if desired, before serving. Enjoy!
Notes
- Store leftovers in an airtight container in the refrigerator for up to 2 days; the texture may change slightly but it will still be delicious.
- This mousse is best served cold, so reheating isn't recommended; instead, let it chill fully for the best texture and flavor.
- For an elegant presentation, layer the mousse in parfait glasses with crushed cookies or granola for added texture.
- For a richer chocolate flavor, use Dutch-processed cocoa powder and consider adding a tablespoon of melted dark chocolate.
