- 2 medium zucchini, sliced lengthwise into 1/2-inch thick planks
- 1 cup uncooked brown rice
- 2 tablespoons olive oil, divided
- 1 teaspoon kosher salt, divided

- 2 cloves garlic, minced
Instructions
- Step 1: Prepare the rice base. Cook the brown rice according to package instructions (this typically takes 30-40 minutes). While the rice cooks, preheat your grill to medium-high heat (about 400°F).
- Step 2: Prepare the steak and zucchini. Pat the steak dry and rub it with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Toss the zucchini planks with the remaining 1 tablespoon of olive oil, the minced garlic, the remaining 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.
- Step 3: Grill the steak. Place the seasoned steak on the hot grill. Cook for 4–6 minutes per side for medium-rare, or longer to desired doneness. Remove the steak from the grill and let it rest on a cutting board, tented loosely with foil, for at least 5 minutes.
- Step 4: Grill the zucchini. While the steak rests, place the zucchini planks on the grill grates. Grill for 3–4 minutes per side, or until they have deep grill marks and are tender-crisp. Remove the zucchini from the grill and dice it into bite-sized pieces.
- Step 5: Assemble the bowls. Slice the rested steak thinly against the grain. Divide the cooked brown rice among serving bowls. Top the rice with the sliced steak and the diced grilled zucchini. Serve immediately.
Notes
- To maximize freshness, store leftover steak and zucchini separately from the brown rice in airtight containers; consume within 3 days.
- When reheating, briefly microwave the sliced steak laid on top of the rice, covering the bowl with a damp paper towel for 30–60 seconds to prevent the meat from drying out.
- For a vibrant finish, add a spoonful of pesto or a squeeze of fresh lime juice over the assembled bowl just before serving.
