Ingredients
- Peach Nectar With Vanilla or Rye Apple Juice With Vanilla: 2 oz
- Unsweetened Cranberry Juice: 1 oz
- Fresh Apple Cider (or clear apple juice): 1 oz
- Fresh Lemon Juice: 0.75 oz
- Simple Syrup (1:1 ratio): 0.5 oz
- Egg White (or Aquafaba): 1 medium egg white
- Angostura Bitters: 2 dashes
- Garnish: 1 thin apple slice and 3-4 fresh cranberries
Instructions
- Step 1: Combine the non-alcoholic bourbon flavor, cranberry juice, apple cider, lemon juice, simple syrup, and egg white into a cocktail shaker. Secure the lid and perform a "dry shake" (without ice) for 30 seconds to fully emulsify the egg white and create a rich foam.
- Step 2: Fill the shaker three-quarters full with ice. Secure the lid tightly and perform a "wet shake" vigorously for an additional 15-20 seconds until the shaker is well-chilled.
- Step 3: Double strain the mixture through a fine-mesh sieve into a chilled coupe glass or a chilled rocks glass filled with fresh ice, if preferred. This removes any ice shards and ensures a smooth texture.
- Step 4: Allow the foam to settle on top of the drink. Carefully dash the Angostura bitters directly onto the surface of the foam for aromatic enhancement and visual contrast.
- Step 5: Garnish the cocktail by threading the apple slice onto the rim of the glass or gently placing the cranberries directly onto the foam before serving immediately.
Notes
- The texture relies on fresh emulsified egg white, so always prepare this cocktail immediately before serving as the foam will rapidly deflate if stored.
- Since reheating is impossible for this chilled sour, maximize the drinking experience by ensuring your coupe glass is well-chilled in the freezer while you prepare the ingredients.
- Serve this sophisticated sour alongside savory, salty appetizers, like bresaola bites or aged cheddar, to beautifully contrast the drink’s tart, autumnal profile.
- For the fluffiest, most stable foam, dedicate yourself to the full 30-second dry shake (Step 1); the friction is what builds the necessary volume before you introduce the chilling ice.
