Ingredients
Scale
- 8 ounces block feta cheese, drained
- 2 tablespoons heavy cream or Greek yogurt
- 1/2 cup dried cranberries
- 1 teaspoon fresh orange zest
- 1/4 cup honey
- 1 teaspoon red pepper flakes (or 1/2 teaspoon cayenne pepper)
- 2 tablespoons good quality extra virgin olive oil
Instructions
- Step 1: Combine the drained feta cheese, heavy cream (or Greek yogurt), and 1 tablespoon of olive oil in a food processor. Process on high speed for 1-2 minutes, scraping down the sides as needed, until the mixture is completely smooth, light, and fluffy.
- Step 2: Transfer the whipped feta mixture to a mixing bowl. Gently fold in the dried cranberries and the fresh orange zest until just combined. Avoid overmixing once the cranberries are added.
- Step 3: Prepare the hot honey. In a small saucepan, combine the honey and red pepper flakes over low heat. Simmer gently for 2-3 minutes, stirring occasionally, until the honey is fluid and the chili flavor is fully infused. Remove from heat and let cool slightly.
- Step 4: Spread the cranberry whipped feta onto a shallow serving platter or small bowl. Use the back of a spoon to create peaks and valleys in the dip for texture. Drizzle the remaining 1 tablespoon of olive oil over the dip.
- Step 5: Just before serving, generously drizzle the prepared warm hot honey mixture over the entire dip. Serve immediately with pita chips, sturdy crackers, or fresh bread.
Notes
- Store leftover cranberry whipped feta (undressed with hot honey) tightly covered in the refrigerator for up to 3 days, allowing it to warm slightly before serving again for better texture.
- If the infused hot honey has crystallized or thickened upon cooling, gently reheat it in the microwave for 10-15 seconds or over very low heat until it reaches a fluid, drizzly consistency.
- Elevate this dip by serving it as a stunning spread on a holiday charcuterie board, paired with toasted walnuts or thinly sliced bresaola for savory balance.
- Ensure the whipped feta is processed for the full 1-2 minutes; true smoothness requires patience and scraping down the bowl to achieve that light, fluffy, almost mousse-like texture.
