- 8 oz block feta cheese, drained and crumbled
- 1/4 cup plain full-fat Greek yogurt
- 1 cup fresh or frozen cranberries
- 1/4 cup maple syrup or granulated sugar
- 2 tablespoons extra virgin olive oil, plus extra for drizzling
- 1 teaspoon fresh orange zest
- 1/4 teaspoon freshly ground black pepper
Instructions
- Step 1: Prepare the Cranberry Compote by combining the cranberries and maple syrup (or sugar) in a small saucepan over medium heat. Bring to a simmer, stirring occasionally, until the cranberries begin to burst and the mixture thickens slightly (about 5 to 7 minutes). Remove from heat and allow the compote to cool completely.
- Step 2: While the compote cools, prepare the whipped feta base. Place the crumbled feta cheese, Greek yogurt, 2 tablespoons of olive oil, orange zest, and black pepper into a food processor.
- Step 3: Process the mixture on high speed, stopping occasionally to scrape down the sides, until the feta is completely smooth, light, and creamy (this may take 2 to 3 minutes). If the mixture is too thick, add a tiny splash of cold water or additional olive oil.
- Step 4: Spread the whipped feta evenly onto a shallow serving dish or platter, creating a slight well in the center for the topping.
- Step 5: Spoon the cooled cranberry compote over the top of the whipped feta. Drizzle with a small amount of fresh olive oil before serving immediately with crusty bread, crackers, or vegetables.
Notes
- The whipped feta base can be prepared up to two days in advance; store the base and the compote separately in the refrigerator, assembling just before serving to prevent the colors from bleeding.
- If your whipped feta is still grainy after three minutes of processing, add a teaspoon of ice-cold water to the food processor to help the mixture emulsify into a light, airy texture.
- For a unique holiday pairing, serve the dip alongside slices of warmed prosciutto or spiced pecans instead of traditional crackers.
- When simmering the compote, gently mash about half of the cranberries against the side of the saucepan to release more pectin, resulting in a naturally thicker, jam-like topping.
