  • 8 ounces dry penne pasta
  • 2 cups fresh spinach

Instructions

  1. Step 1: Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they are softened and have released their liquid. Stir in the minced garlic and sauté for 1 minute until fragrant.
  2. Step 2: Add the sliced sun-dried tomatoes to the skillet along with the broth, heavy cream, and about 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Bring the mixture to a gentle simmer.
  3. Step 3: Add the dry penne pasta directly to the skillet and stir well. Cover the skillet and reduce the heat to medium-low. Cook for 15-20 minutes, stirring occasionally to prevent sticking, until the pasta is cooked through and most of the liquid has been absorbed, creating a creamy sauce.
  4. Step 4: Once the pasta is al dente, stir in the fresh spinach. Continue cooking for 2-3 minutes, or until the spinach has fully wilted into the sauce.
  5. Step 5: Remove the skillet from the heat. Taste the sauce and adjust seasonings (salt, pepper, or Italian herbs) as needed. Stir in 1/4 cup of grated Parmesan cheese (optional) before serving immediately.
