Instructions
- Step 1: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. In a small bowl, toss the diced apples and chopped pecans with the 2 tablespoons of melted butter, the initial 1/4 cup of sugar, and 1 teaspoon of cinnamon; set the mixture aside.
- Step 2: Gently unfold the thawed puff pastry sheet on a lightly floured surface. Cut the sheet into 12 equal squares (about 3×3 inches each). Place a spoonful of the apple-pecan mixture onto the center of each pastry square.
- Step 3: Fold the pastry squares diagonally to form small triangles, ensuring the filling is completely enclosed. Press the edges firmly to seal, then use a fork to crimp the seams, which prevents the filling from escaping during baking.
- Step 4: Brush the tops of the assembled pastry bites lightly with the whisked egg wash. Bake the bites for 15-18 minutes, or until the pastry is puffed and golden brown. Let them cool on the baking sheet for 5 minutes.
- Step 5: While the bites are cooling, combine the remaining 1/2 cup of granulated sugar and 2 teaspoons of cinnamon in a wide, shallow dish. While the bites are still warm, gently toss each one in the cinnamon-sugar mixture until fully coated before serving.
Notes
- Store cooled bites in an airtight container at room temperature for up to 2 days; refrigerating them will diminish the crisp texture of the puff pastry.
- If the bites lose their crispness, reheat them quickly in a 350°F (175°C) oven or toaster oven for 5-7 minutes until the pastry is flaky again.
- Serve these warm with a drizzle of salted caramel sauce or a small dollop of crème fraîche to balance the rich cinnamon sugar coating.
- To ensure a flaky crust and prevent leakage, make sure the edges are sealed very firmly and crimped well with a fork, as the apple filling will try to escape during baking.
