- 1.5 lbs Boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup All-purpose flour
- 1/2 cup Yellow cornmeal
- 2 large Eggs, beaten
- 3 cups Plain popcorn, popped (no butter or salt)
- 1/2 cup Honey BBQ sauce
- 2 tablespoons Honey
- 1 tablespoon Olive oil
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
- Step 2: In a shallow dish, combine flour and cornmeal. In a separate shallow dish, place the beaten eggs. In a third shallow dish, place the popped popcorn.
- Step 3: Dip each piece of chicken into the flour mixture, then into the egg, and finally press firmly into the popcorn to coat completely.
- Step 4: Place the coated chicken pieces on the prepared baking sheet.
- Step 5: In a small bowl, whisk together the Honey BBQ sauce, honey, and olive oil. Brush the mixture evenly over the popcorn-coated chicken.
- Step 6: Bake for 20-25 minutes, or until the chicken is cooked through and the popcorn coating is golden brown.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a preheated oven at 350°F (175°C) for 5-10 minutes to help the popcorn regain some crispness.
- Serve with a side of ranch or blue cheese dressing for dipping.
- For extra crispy chicken, lightly spray the popcorn coating with cooking oil before baking.
