Instructions
- Step 1: Grate the English cucumber using a box grater. Place the grated cucumber in a clean kitchen towel or several layers of paper towels and squeeze firmly to remove as much excess moisture as possible; this prevents the sandwiches from becoming soggy.
- Step 2: In a medium bowl, combine the softened cream cheese, chopped fresh dill, lemon juice, kosher salt, black pepper, and garlic powder until thoroughly mixed and smooth.
- Step 3: Fold the thoroughly dried grated cucumber into the cream cheese mixture until evenly distributed. Taste and adjust seasoning if necessary.
- Step 4: Take two slices of bread and spread a generous layer (about 2 tablespoons) of the cucumber salad mixture evenly onto one slice. Place the second slice of bread on top to form a sandwich.
- Step 5: Using a sharp knife, carefully trim the crusts from all four sides of the assembled sandwich. Cut the sandwich into halves or quarters (triangles or finger shapes work best).
