Achieve crisp, never-soggy cucumber sandwiches! We squeeze grated cukes and blend them with tangy lemon, fresh dill, and smooth cream cheese. Full instructions and nutritional facts are included.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 large English cucumber
  • 8 ounces cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 12 slices of white sandwich bread

Instructions

  1. Step 1: Grate the English cucumber using a box grater. Place the grated cucumber in a clean kitchen towel or several layers of paper towels and squeeze firmly to remove as much excess moisture as possible; this prevents the sandwiches from becoming soggy.
  2. Step 2: In a medium bowl, combine the softened cream cheese, chopped fresh dill, lemon juice, kosher salt, black pepper, and garlic powder until thoroughly mixed and smooth.
  3. Step 3: Fold the thoroughly dried grated cucumber into the cream cheese mixture until evenly distributed. Taste and adjust seasoning if necessary.
  4. Step 4: Take two slices of bread and spread a generous layer (about 2 tablespoons) of the cucumber salad mixture evenly onto one slice. Place the second slice of bread on top to form a sandwich.
  5. Step 5: Using a sharp knife, carefully trim the crusts from all four sides of the assembled sandwich. Cut the sandwich into halves or quarters (triangles or finger shapes work best).
  6. Step 6: Arrange the sandwiches on a platter and cover loosely with plastic wrap. Chill in the refrigerator for at least 30 minutes before serving for best flavor and texture.

Notes

  • If storing leftovers, tightly wrap the finished sandwiches in plastic and refrigerate for no more than 24 hours, as the bread will begin to harden quickly afterward.
  • Because this delicate sandwich filling contains fresh ingredients and cream cheese, it should never be reheated; always serve this delightful treat chilled.
  • Elevate your presentation by cutting the crustless sandwiches into precise finger shapes and serving them alongside iced tea or lemonade at your next gathering.
  • The key to a non-soggy sandwich is aggressively squeezing the moisture from the grated cucumber—don't be afraid to use all your strength in Step 1!
