- Shelled Pistachios, roughly chopped (3/4 cup)
Instructions
- Step 1: Preheat oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Step 2: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture forms coarse crumbs.
- Step 3: Reserve 1 cup of the crumb mixture for the topping. Press the remaining mixture firmly and evenly into the bottom of the prepared pan to form the crust. Bake the crust for 10 minutes.
- Step 4: Remove the par-baked crust from the oven. Gently spread the blackberry jam evenly over the warm crust, extending to all edges.
- Step 5: Mix the reserved crumb mixture with the chopped pistachios. Sprinkle this pistachio-crumb mixture evenly over the jam layer. Return the bars to the oven and bake for 25 to 30 minutes, or until the topping is lightly golden brown.
- Step 6: Allow the bars to cool completely in the pan on a wire rack (about 2 hours) before lifting them out using the parchment paper overhang. Cut into squares for serving.

- Keep leftover bars fresh for up to 5 days stored in an airtight container in the refrigerator, separating layers with parchment if stacking.
- If you prefer a warmer filling and a crisper topping, refresh individual bars in a toaster oven for 3 to 5 minutes at 300°F (150°C) just before serving.
