Instructions
- Step 1: Combine the crumbled feta cheese, softened cream cheese, 2 tablespoons of the olive oil, lemon zest, and black pepper in the bowl of a food processor.
- Step 2: Process the mixture for 1 to 2 minutes, stopping occasionally to scrape down the sides, until the dip is completely smooth, airy, and creamy.
- Step 3: Scoop the whipped feta onto a shallow serving dish or small platter and use a spoon or spatula to create a shallow well in the center for the topping. Chill the dip in the refrigerator for at least 15 minutes to firm up slightly.
- Step 4: While the dip chills, prepare the topping by gently stirring the cranberry sauce and chopped rosemary together in a small bowl. If the sauce is too thick, heat it briefly in the microwave to loosen.
- Step 5: Just before serving, spoon the cranberry mixture evenly over the center of the chilled whipped feta. Drizzle the remaining 1 tablespoon of olive oil over the top of the cranberry sauce and serve immediately with assorted crackers.

- Store the plain whipped feta base airtight in the refrigerator for up to 3 days; add the cranberry topping right before serving, as moisture separation may occur if topped early.
- Since this is a chilled dip, do not reheat; if the base has been deeply chilled, allow it to sit out on the counter for 10 minutes before serving to soften slightly for easier scooping.
- For a heartier presentation, serve this dip not only with sturdy crackers but also alongside apple slices or crunchy pretzel crisps to best balance the sweet cranberry and tangy feta.
