Ingredients
Scale
- 4 tablespoons turkey drippings, skimmed of fat
- 4 tablespoons all-purpose flour
- 3 cups turkey or chicken broth
- 1/2 cup dry white wine (optional)
- 1 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Step 1: Skim the fat from the turkey drippings, reserving 4 tablespoons of drippings in a saucepan. If you don't have enough drippings, supplement with butter or olive oil to equal 4 tablespoons.
- Step 2: Whisk in the flour into the drippings over medium heat and cook for 1-2 minutes, stirring constantly, to create a roux. This will help thicken the gravy.
- Step 3: Slowly whisk in the turkey or chicken broth, making sure to incorporate the roux fully to prevent lumps.
- Step 4: If using, add the white wine and bring the mixture to a simmer, stirring occasionally.
- Step 5: Stir in the thyme, sage, and pepper. Continue to simmer for 5-7 minutes, or until the gravy has thickened to your desired consistency.
- Step 6: Taste and season with salt as needed. Serve warm with your Thanksgiving turkey!
Notes
- Store leftover gravy in an airtight container in the refrigerator for up to 3 days.
- For smooth reheating, whisk in a splash of broth before gently warming the gravy on the stovetop.
- Pour this flavorful gravy generously over sliced turkey, stuffing, and mashed potatoes for the ultimate Thanksgiving experience.
- Don't skip the roux! Cooking the flour with the drippings creates a flavorful base and ensures a perfectly thickened gravy.
