- 2 Salmon fillets (4–6 oz each)
- 1 tbsp Olive oil
- 1 Lemon, halved
- 1/2 tsp Garlic powder
- 1/4 tsp Paprika
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 1 cup Broccoli florets
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: Place broccoli florets on one side of the baking sheet. Drizzle with half of the olive oil, and sprinkle with salt and pepper.
- Step 3: Place the salmon fillets on the other side of the baking sheet. Drizzle with the remaining olive oil and lemon juice from one lemon half. Sprinkle with garlic powder, paprika, salt, and pepper.
- Step 4: Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender-crisp.
- Step 5: Squeeze the remaining lemon half over the salmon and broccoli before serving.
Notes
- Store leftover salmon and broccoli in an airtight container in the refrigerator for up to 2 days.
- For best results, gently reheat the salmon and broccoli in a skillet over medium-low heat with a splash of water to keep it moist.
- Serve this vibrant dish with a side of quinoa or couscous to soak up all the delicious lemon-garlic flavors.
- To prevent dry salmon, consider broiling it for the last 2-3 minutes of cooking time to achieve a perfectly browned top.
