Instructions
- Step 1: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. In a small bowl, combine the softened goat cheese, thyme leaves, salt, and pepper until thoroughly mixed.
- Step 2: Unroll the thawed puff pastry sheet onto a lightly floured surface. Evenly spread the fig jam over the entire surface, leaving a 1/2-inch border along all edges.
- Step 3: Carefully spread the goat cheese mixture over the layer of fig jam, ensuring an even distribution. Drizzle the tablespoon of honey evenly over the cheese mixture.
- Step 4: Starting from one long side, tightly roll the pastry into a firm log shape. Wrap the log tightly in plastic wrap and chill in the freezer for 15 minutes to allow it to firm up for easier slicing.
- Step 5: Remove the log and slice it into 1/2-inch thick rounds (pinwheels). Arrange the pinwheels cut-side up on the prepared baking sheet.
- Step 6: Beat the large egg with 1 teaspoon of water to create an egg wash, then lightly brush the tops of the pinwheels. Bake for 15 to 18 minutes, or until the pastry is puffed and golden brown. Serve warm or at room temperature.
