  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 fillets of halibut (about 6 ounces each)
  • 2 medium-sized potatoes, sliced into thin rounds
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Step 1: Preheat your oven to 400°F (200°C) and lightly grease a baking dish with cooking spray or a bit of olive oil.
  2. Step 2: In a large bowl, combine the sliced potatoes with 2 tablespoons of olive oil, garlic powder, dried thyme, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Step 3: Spread the seasoned potato slices in an even layer on the bottom of the prepared baking dish. Place the halibut fillets on top of the potatoes.
  4. Step 4: Drizzle the remaining tablespoon of olive oil and lemon juice over the halibut fillets. Season them with additional salt and pepper to taste.
  5. Step 5: Cover the baking dish with aluminum foil and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 10 minutes or until the halibut is cooked through and flakes easily with a fork.
  6. Step 6: Garnish with fresh parsley before serving. Enjoy your flavorful baked halibut with potatoes!

Notes

  • For optimal storage, wrap any leftover halibut and potatoes tightly in plastic wrap or place them in an airtight container, and refrigerate for up to 2 days.
  • To reheat, place the halibut and potatoes in a preheated oven at 350°F (175°C) for about 10-15 minutes, covering with foil to prevent drying out.
  • Serve your flavorful baked halibut with a side of steamed asparagus or a fresh green salad to complement the dish's rich flavors and add some crunch.
  • For the best results, ensure the halibut is at room temperature before baking for even cooking, and don’t hesitate to adjust the seasonings based on your taste preferences!
