Instructions
- Step 1: In a medium bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Mix until well combined and smooth.
- Step 2: Line a baking sheet with parchment paper. Spoon or pipe small dollops of the yogurt mixture onto the prepared baking sheet. Aim for bite-sized portions, about 1 inch in diameter.
- Step 3: Freeze the yogurt bites for at least 2 hours, or until completely frozen solid. This is important to prevent melting during the chocolate dipping process.
- Step 4: While the yogurt bites are freezing, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
- Step 5: Remove the frozen yogurt bites from the freezer. Dip each bite into the melted dark chocolate, ensuring it's fully coated. Place the dipped bites back onto the parchment-lined baking sheet.
- Step 6: Immediately sprinkle the dipped bites with sea salt flakes. Return the baking sheet to the freezer for another 10-15 minutes to allow the chocolate to set completely. Store in an airtight container in the freezer.
