Ingredients
- Boneless, skinless chicken breasts: 1.5 lbs, cut into 1-inch cubes
- Olive oil: 1/4 cup
- Lemon juice: 1/4 cup
- Dried oregano: 2 tablespoons
- Garlic: 4 cloves, minced
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Wooden skewers: 8-10
Instructions
- Step 1: In a medium bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
- Step 2: Add the cubed chicken to the marinade, ensuring all pieces are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
- Step 3: Preheat grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Step 4: Thread the marinated chicken onto the skewers.
- Step 5: Grill the souvlaki skewers for 8-12 minutes, turning occasionally, until the chicken is cooked through and has a slight char. The internal temperature should reach 165°F (74°C).
- Step 6: Remove from grill and let rest for a few minutes before serving. Serve warm with pita bread, tzatziki sauce, and your favorite Greek sides.
Notes
- To keep your souvlaki juicy, store any leftovers in an airtight container with a drizzle of olive oil.
- For best results when reheating, gently warm the souvlaki in a skillet with a touch of olive oil to prevent drying out.
- Serve your souvlaki in a warm pita with chopped tomatoes, onions, and a generous dollop of homemade tzatziki for a classic Greek experience.
- Don't skip the marinating time – it's key for infusing the chicken with flavor and tenderizing it.
