Ingredients

  • Feta Cheese Block: 8 ounces
  • Large Ripe Tomato: 1, sliced
  • Cucumber: 1/2, sliced
  • Red Onion: 1/4, thinly sliced
  • Kalamata Olives: 1/2 cup, pitted
  • Fresh Mint Leaves: 1/4 cup, chopped
  • Extra Virgin Olive Oil: 2 tablespoons
  • Red Wine Vinegar: 1 tablespoon

Instructions

  1. Step 1: Slice the feta cheese into thick, approximately 1/2-inch slices. Try to achieve similar sizes for the tomato and cucumber slices.
  2. Step 2: Begin assembling the tower by placing a slice of tomato on a serving plate as the base. Drizzle lightly with olive oil and red wine vinegar.
  3. Step 3: Layer a slice of feta cheese on top of the tomato, followed by a slice of cucumber and a few rings of red onion. Sprinkle with a few Kalamata olives and some chopped mint.
  4. Step 4: Repeat the layering process (tomato, feta, cucumber, red onion, olives, mint) until all ingredients are used, ending with a feta slice as the top layer.
  5. Step 5: Drizzle the entire tower with the remaining olive oil and red wine vinegar. Garnish with extra mint leaves and a few more olives.
