Ingredients
- Feta Cheese Block: 8 ounces
- Large Ripe Tomato: 1, sliced
- Cucumber: 1/2, sliced
- Red Onion: 1/4, thinly sliced
- Kalamata Olives: 1/2 cup, pitted
- Fresh Mint Leaves: 1/4 cup, chopped
- Extra Virgin Olive Oil: 2 tablespoons
- Red Wine Vinegar: 1 tablespoon
Instructions
- Step 1: Slice the feta cheese into thick, approximately 1/2-inch slices. Try to achieve similar sizes for the tomato and cucumber slices.
- Step 2: Begin assembling the tower by placing a slice of tomato on a serving plate as the base. Drizzle lightly with olive oil and red wine vinegar.
- Step 3: Layer a slice of feta cheese on top of the tomato, followed by a slice of cucumber and a few rings of red onion. Sprinkle with a few Kalamata olives and some chopped mint.
- Step 4: Repeat the layering process (tomato, feta, cucumber, red onion, olives, mint) until all ingredients are used, ending with a feta slice as the top layer.
- Step 5: Drizzle the entire tower with the remaining olive oil and red wine vinegar. Garnish with extra mint leaves and a few more olives.
Notes
- To keep the tower from getting soggy, assemble it just before serving.
- This salad is best enjoyed fresh and doesn't reheat well.
- Serve the feta tower as a vibrant appetizer or a light lunch, paired with crusty bread for soaking up the flavorful juices.
- For a cleaner presentation, use a cookie cutter to shape the tomato and cucumber slices.
