- 1 cup mixed chopped cucumber and tomato
Instructions
- Step 1: Cook the long-grain rice according to package directions, typically requiring 2 cups of water or broth. Once cooked, fluff the rice with a fork and set aside, keeping it warm.
- Step 2: Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and break it up with a spoon, cooking until browned (about 6-8 minutes). Drain any excess fat from the pan.
- Step 3: Reduce the heat to medium. Add the dried oregano, a pinch of salt and pepper, and the chicken broth to the skillet. Allow the mixture to simmer until the broth has mostly reduced and the turkey is fully cooked. Remove from heat and stir in the fresh lemon juice.
- Step 4: To assemble the bowls, divide the cooked rice evenly among 2-4 serving bowls. Spoon the seasoned Greek ground turkey mixture over the center of the rice base.
- Step 5: Garnish each bowl generously with the chopped cucumber and tomato mixture, and sprinkle the crumbled feta cheese over the top before serving.

- For best meal prep results, store the seasoned turkey/rice mixture and the fresh cucumber-tomato-feta toppings in separate airtight containers in the refrigerator for up to 3 days.
