Ingredients

  • Cooked quinoa: 1 cup
  • Black beans, rinsed and drained: 1/2 cup
  • Corn kernels, frozen or canned: 1/2 cup
  • Diced red bell pepper: 1/2 cup
  • Cooked turkey chorizo sausage, crumbled: 4 oz
  • Shredded cheddar cheese: 1/4 cup
  • Eggs: 2 large
  • Avocado, diced: 1/4 of an avocado

Instructions

  1. Step 1: In a skillet over medium heat, warm the cooked quinoa, black beans, corn, and bell pepper until heated through, about 5 minutes.
  2. Step 2: While the vegetables are warming, cook the beef chorizo sausage in a separate skillet until browned and cooked through.
  3. Step 3: Simultaneously, cook the eggs to your preference (fried, scrambled, or poached).
  4. Step 4: Divide the quinoa mixture between two bowls.
  5. Step 5: Top each bowl with the cooked turkey chorizo, eggs, cheddar cheese, and diced avocado.

Notes

  • Store leftover components separately in airtight containers to prevent the quinoa from becoming soggy.
  • For a quick reheat, microwave the quinoa mixture and sausage, then add fresh eggs and avocado.
