Instructions
- Step 1: Heat a large pot or Dutch oven over medium heat. Add the diced onion (and 1 tablespoon of cooking oil, if using) and sauté for 5-7 minutes until softened. Stir in the curry powder and 4 cloves of minced garlic (if using) and cook for 1 minute until fragrant.
- Step 2: Add the cubed sweet potatoes, vegetable broth, and diced tomatoes (with their liquid) to the pot. Bring the mixture to a rolling boil, then reduce the heat, cover, and let simmer for 15-20 minutes.
- Step 3: Continue simmering until the sweet potatoes are fork-tender. If the stew seems too thin, uncover the pot for the last 5-10 minutes of cooking to allow some liquid to reduce.
- Step 4: Stir in the creamy peanut butter and the rinsed chickpeas. Stir continuously until the peanut butter is completely dissolved and incorporated, which will slightly thicken the stew and make the broth creamy.
- Step 5: Fold in the fresh spinach and cook just until wilted (about 2 minutes). Taste the stew and adjust seasoning with salt, pepper, or a pinch of red pepper flakes for heat before serving hot.
