This dense, peanut butter ‘cookie dough’ is actually a high-protein frozen yogurt bite! Just stir Greek yogurt, PB, and vanilla protein until thick. Freeze for a healthy, guilt-free dessert.

Ingredients

  • 1 cup plain Greek yogurt (full-fat or 0%)
  • 1/4 cup creamy peanut butter
  • 2 tablespoons maple syrup or honey
  • 1 scoop vanilla or unflavored protein powder
  • 1/2 teaspoon alcohol-free vanilla extract
  • 1/8 teaspoon salt
  • 1/4 cup mini chocolate chips (or desired topping)

Instructions

  1. Step 1: In a medium mixing bowl, combine the Greek yogurt, creamy peanut butter, maple syrup, vanilla bean paste, and salt. Stir well until the mixture is uniform.
  2. Step 2: Add the scoop of vanilla protein powder to the mixture. Stir vigorously until the mixture is completely smooth, lump-free, and thick. The consistency should be dense, similar to cookie dough, not runny.
  3. Step 3: Prepare a baking sheet by lining it with parchment paper, or use a silicone mini muffin tray for easier removal. Use a small spoon or a piping bag to drop bite-sized dollops (about 1 to 1.5 tablespoons each) onto the prepared surface.
  4. Step 4: Sprinkle the tops of each yogurt bite with mini chocolate chips or finely chopped nuts. If using a large sheet, ensure the bites do not touch each other.
  5. Step 5: Place the tray immediately into the freezer. Freeze for at least 3-4 hours, or until the bites are completely solid. Once frozen, transfer the bites to an airtight container and store in the freezer, eating them directly from frozen.

Notes

  • For best texture and freshness, transfer the solid frozen bites to an airtight container immediately after they set, using small sheets of parchment paper between layers to prevent them from sticking together.
  • Do not allow these bites to thaw; they are intended to be eaten directly from the freezer, as they melt quickly and the smooth texture degrades significantly if left at room temperature for more than five minutes.
  • If your mixture seems too runny after adding the protein powder, incorporate a tiny bit more powder until the batter is truly dense and holds its shape easily when dolloped, ensuring the bites freeze correctly.
