  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 1/4 cup cold butter, cubed

  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 2 cups boiling water

Instructions

  1. Step 1: In a large bowl, whisk together 1 1/2 cups flour and salt. Cut in shortening and cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Step 2: Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  3. Step 3: Preheat oven to 400°F (200°C). On a lightly floured surface, roll out the dough to fit a 9-inch pie plate. Transfer the dough to the pie plate and crimp the edges.
  4. Step 4: In a saucepan, whisk together the sugar and 1/4 cup flour. Gradually stir in the boiling water until smooth. Bring the mixture to a boil over medium heat, stirring constantly, and cook for 1 minute.
  5. Step 5: Pour the hot sugar mixture into the prepared pie crust.
  6. Step 6: Bake for 15 minutes at 400°F (200°C), then reduce the oven temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the crust is golden brown and the filling is set. Let cool completely before serving.
