- 1 pound Sweet Italian sausage
- 1 large Yellow onion, diced
- 4 cloves Garlic, minced
- 1 (28 ounce) can Crushed tomatoes
- 6 cups Chicken broth
- 1 tablespoon Dried Italian seasoning
- 8 Lasagna noodles, broken into 1–2 inch pieces
- 1/2 cup Whole milk ricotta cheese
Instructions
- Step 1: In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain excess grease, then add the diced yellow onion and sauté for 5-7 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant.
- Step 2: Stir in the crushed tomatoes and dried Italian seasoning. Allow the mixture to simmer for 5 minutes, scraping up any browned bits from the bottom of the pot to build flavor.
- Step 3: Pour in the chicken broth and bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover the pot partially, and let the soup simmer for 15 minutes to allow the flavors to meld.
- Step 4: Add the broken lasagna noodle pieces to the simmering soup. Cook for 8-10 minutes, or until the pasta is al dente (tender but firm). Stir frequently during this time to prevent the noodles from sticking to the bottom of the pot.
- Step 5: Ladle the hot soup into bowls. For serving, dollop 1-2 tablespoons of ricotta cheese on top of each bowl and sprinkle with fresh basil or grated Parmesan cheese, if desired.
Notes
- Store leftover soup base separately from the cooked noodles; this prevents the pasta from becoming overly soft or mushy upon refrigeration.
- When reheating leftovers on the stove, add a splash of extra chicken broth or water to restore the desired soupy consistency, as the noodles will have thickened the base significantly.
- Elevate the "lasagna" experience by serving this soup with a side of warm, crusty garlic bread for dipping, or a vibrant side salad to cut through the richness of the sausage and cheese.
