  • 1 cup uncooked long-grain white rice
  • 2 ripe avocados, diced
  • 1/4 cup fresh lime juice, divided
  • 3 tablespoons honey, divided
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Step 1: Prepare the Honey Lime Marinade. Whisk together 2 tablespoons of lime juice, 2 tablespoons of honey, the cumin, and a pinch of salt and pepper. Pour half of the mixture over the chicken breasts and let marinate for at least 15 minutes.
  2. Step 2: Cook the Chicken. Heat the olive oil in a skillet over medium-high heat. Sear the marinated chicken for 5-7 minutes per side until fully cooked (internal temperature 165°F). Remove the chicken, then pour the remaining honey-lime mixture into the hot skillet to create a glaze. Slice the chicken thinly.
  3. Step 3: Cook the Rice and Prepare the Avocado Mixture. Cook the white rice according to package directions. While the rice is hot, gently fold in the diced avocado, the chopped cilantro, and the remaining 2 tablespoons of lime juice. Season lightly with salt.
  4. Step 4: Stack the Rice. Use a ring mold or a small, round container to firmly press the avocado rice mixture onto the serving plate, creating a solid base for the stack. Carefully remove the mold.
  5. Step 5: Assemble and Serve. Arrange the sliced honey-lime chicken strips neatly on top of the avocado rice stack. Drizzle the warm skillet glaze over the chicken and garnish with extra cilantro before serving.
