- 4 boneless, skinless chicken breasts
- 4 oz block or crumbled feta cheese
- 2 Tbsp olive oil
- 1/4 cup honey
- 1 Tbsp crushed red pepper flakes (adjust to heat preference)

- Salt and freshly ground black pepper, to taste
Instructions
- Step 1: Preheat the oven to 400°F (200°C). Pat the chicken breasts dry and season generously on both sides with salt, black pepper, and dried oregano.
- Step 2: Heat the olive oil in an oven-safe skillet (cast iron works well) over medium-high heat. Sear the seasoned chicken breasts for 3 minutes per side until nicely golden brown.
- Step 3: Remove the skillet from the heat. Crumble the feta cheese block or sprinkle the pre-crumbled feta evenly over the top of the chicken breasts. Transfer the skillet to the preheated oven and bake for 12-18 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
- Step 4: While the chicken bakes, prepare the hot honey. Combine the honey, crushed red pepper flakes, and minced garlic in a small saucepan over medium-low heat. Bring the mixture to a gentle simmer, stirring constantly for about 2 minutes, then remove from the heat.
- Step 5: Carefully remove the skillet from the oven. Drizzle the hot honey mixture generously over the feta-covered chicken breasts before serving immediately.

- Store leftovers in an airtight container for up to 3 days, keeping any extra hot honey separate so the chicken doesn't get overly sticky upon cooling.
- To prevent the feta from drying out, reheat portions loosely covered in a 300°F oven, then finish with a fresh drizzle of the hot honey glaze after warming.
- Balance the rich, spicy flavors by serving this dish alongside a cool, crisp side like a simple cucumber salad or over creamy garlic rice to soak up the residual glaze.
- For the deepest flavor and best crust, ensure your chicken breasts are patted extremely dry before seasoning and searing in the hot olive oil.
