Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breasts, cut in half horizontally
- 1 tbsp olive oil
- 1 large jalapeño, thinly sliced (seeds removed for less heat)
- 1 cup sliced peaches, fresh or frozen (thawed)
- 1/4 cup honey or brown sugar
- 1/4 cup apple cider vinegar
- 1 clove garlic, minced
- 1/2 tsp salt and 1/4 tsp black pepper
Instructions
- Step 1: Season the chicken breasts evenly with salt and pepper. Heat the olive oil in a large skillet over medium-high heat and sear the chicken for 3-4 minutes per side, until browned but not fully cooked. Remove the chicken from the skillet and set aside.
- Step 2: Reduce the heat to medium. Add the sliced jalapeño and minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Step 3: Pour in the honey and apple cider vinegar, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer, stirring constantly, and allow it to bubble for 2 minutes to slightly reduce.
- Step 4: Add the sliced peaches to the simmering sauce and stir gently. Return the seared chicken to the skillet, nestling the pieces into the sauce.
- Step 5: Reduce the heat to low, cover the skillet, and allow the chicken to simmer in the sauce for 8-10 minutes, or until the chicken reaches an internal temperature of 165°F and the sauce has thickened slightly into a glaze.
- Step 6: Remove the lid, stir the sauce one last time, and serve immediately, spooning the jalapeno peach glaze over the chicken.
Notes
- Store any leftovers in an airtight container in the refrigerator for up to 3 days, ensuring the chicken is fully submerged in the glaze to maximize moisture retention.
- When reheating, use the stovetop on low heat and add a small splash of water or chicken broth to loosen the thick glaze, which helps prevent the chicken from drying out.
- Pair this sweet and spicy chicken with fluffy jasmine rice or creamy polenta to ensure none of the delicious jalapeno peach glaze goes to waste.
- For maximum flavor retention and ease of thickening, allow the sauce to reduce uncovered for the final few minutes of simmering (Step 5) to achieve that perfect syrupy glaze consistency.
