Ingredients

  • All-purpose flour: 1 3/4 cups

  • Fresh lemon juice: 1/4 cup
  • Lemon zest: 1 tablespoon
  • Crushed pineapple, well-drained: 1 cup

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease and lightly flour a 9×13 inch baking pan.
  2. Step 2: In a large bowl, combine flour and powdered sugar. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Press the mixture firmly into the prepared baking pan to form the crust.
  3. Step 3: Bake the crust for 18-20 minutes, or until lightly golden.
