- All-purpose flour: 1 3/4 cups
- Unsalted butter, cold and cubed: 1 cup (2 sticks)
- Powdered sugar: 1/2 cup
- Granulated sugar: 1 1/2 cups
- Large eggs: 4
- Fresh lemon juice: 1/4 cup
- Lemon zest: 1 tablespoon
- Crushed pineapple, well-drained: 1 cup
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and lightly flour a 9×13 inch baking pan.
- Step 2: In a large bowl, combine flour and powdered sugar. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Press the mixture firmly into the prepared baking pan to form the crust.
- Step 3: Bake the crust for 18-20 minutes, or until lightly golden.
- Step 4: While the crust is baking, prepare the filling. In a separate bowl, whisk together granulated sugar, eggs, lemon juice, and lemon zest until smooth. Stir in the well-drained crushed pineapple.
- Step 5: Pour the pineapple-lemon filling over the pre-baked crust.
- Step 6: Return the pan to the oven and bake for 20-25 minutes, or until the filling is set and no longer jiggles. Let cool completely before cutting into bars. Dust with powdered sugar before serving, if desired.
