Delicious lemon oatmeal cpineapple juiceble bars recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Rolled Oats: 3 cups
  • All-Purpose Flour: 1 cup
  • Brown Sugar: 1 cup, packed
  • Baking Powder: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Butter: 1/2 cup, cold and cubed
  • Lemon Juice: 1/4 cup
  • Crushed Pineapple in Juice: 1 cup, drained well

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
  2. Step 2: In a large bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt.
  3. Step 3: Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Step 4: Stir in the lemon juice and well-drained crushed pineapple. Mix until just combined. The mixture will be crumbly.
  5. Step 5: Press half of the mixture firmly into the prepared baking pan. Sprinkle the remaining half of the mixture evenly over the top.
  6. Step 6: Bake for 25-30 minutes, or until golden brown. Let cool completely before cutting into bars.

Notes

  • Store cooled bars in an airtight container at room temperature for up to 3 days to maintain their texture.
  • A quick zap in the microwave (10-15 seconds) will make the bars extra soft and fragrant, enhancing the lemon and pineapple.
  • These bars are delicious served with a dollop of Greek yogurt or a scoop of vanilla ice cream for a refreshing dessert.
  • For extra flavor, zest the lemon before juicing and add the zest to the oat mixture for a brighter citrus note.
