- Rolled Oats: 3 cups

- Butter: 1/2 cup, cold and cubed

Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
- Step 2: In a large bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt.
- Step 3: Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Step 4: Stir in the lemon juice and well-drained crushed pineapple. Mix until just combined. The mixture will be crumbly.
- Step 5: Press half of the mixture firmly into the prepared baking pan. Sprinkle the remaining half of the mixture evenly over the top.
- Step 6: Bake for 25-30 minutes, or until golden brown. Let cool completely before cutting into bars.
